For the 2026-2027 season, La Brasserie des Lacs invites you to discover a special culinary programme centred around the season's main patron saint celebrations.

Saint Hubert, Saint Eloi, Saint Barbara, Saint Nicholas and Saint Vincent: each date has its own theme, atmosphere and menu specially created for the occasion.

• Prestige Package: €79 per person with food & wine pairings

3 November 2026 – Saint Hubert | Forest & Ardennes Menu

For Saint Hubert, enjoy a distinctly autumnal menu inspired by the forest, game and our regional identity.

• Amuse-bouche: game croquette, juniper berry mayonnaise
• Starter: pressed duck and foie gras, fig chutney, toasted brioche
• Main course: roasted venison fillet, Grand Veneur sauce, celeriac, roasted pear and croquettes
• Dessert: poached pear, dark chocolate, hazelnut and vanilla ice cream

1 December 2026 – Saint Eloi | The Blacksmith's Banquet

Generous, comforting and convivial cuisine to celebrate Saint Eloi with a true banquet among colleagues.

• Amuse-bouche: beef cheek croquette, wholegrain mustard
• Starter: slow-cooked egg, wild mushrooms, Parmesan cream and hazelnuts
• Main course: confit beef chuck, Belgian dark beer jus, roasted vegetables and potato mousseline
• Dessert: dark chocolate, salted butter caramel and hazelnut praline

4 December 2026 – Saint Barbara | Earth & Fire Menu

As a nod to Saint Barbara, this menu explores the world of fire, smoky flavours and cooking techniques through bold, characterful cuisine.

• Amuse-bouche: lightly smoked beef tartare, mustard cream
• Starter: smoked salmon, beetroot, green apple and horseradish cream
• Main course: grilled beef fillet, pepper and black garlic jus, pommes Anna and root vegetables
• Dessert: dark chocolate dome, praline centre, hazelnut and coffee ice cream

6 December 2026 – Saint Nicholas | Flavours from Our Childhood

For Saint Nicholas, Brasserie des Lacs takes you back to familiar and comforting flavours with a menu that is both festive, indulgent and full of nostalgia.

• Starter: semi-cooked foie gras, toasted gingerbread, onion confit and apple
• Main course: free-range chicken supreme, gingerbread sauce, fondant potato and winter vegetables
• Dessert: milk chocolate crémeux, speculoos, mandarin and caramel

22 January 2027 – Saint Vincent | Winemaker's Menu

The patron saint celebrations continue into January with an evening dedicated to wine. From starter to dessert, the vineyard provides the inspiration throughout the meal.

• Starter: slow-cooked egg, tender leeks and Chardonnay sauce
• Main course: beef cheek braised in red wine, confit shallots and potato mousseline
• Dessert: pear poached in red wine, vanilla, spices and crumble

Good to know: Brasserie des Lacs is located within the Golden Lakes Hotel. Your colleagues can therefore extend their evening by staying overnight and booking a room, so they don't have to drive home after dinner.
